Chai glasses come in 1/2 cup and 1/3 cup sizes so they make excellent individual portions.

The clear glass lets colors and layers shine through. Little jellies, granitas, mini trifles with assorted fruit and small stratas of cheese, beans and salsa served with tortilla chips look great.

Made from tempered glass, I’ve used them to freeze and bake food.

Use them to serve assorted nuts, trail mixes or small dips, cold mousses. I often serve chilled gazpacho shots in them.

Chai glasses are great for stewed fruit. Try this simple stewed apricot compote with fresh cream, a modern take on the class Qubani Ka Meetha. You can do this with figs, apples, pear, berries, almost any fresh or dried fruit.

Chai glasses were made for granita. Serve chilled shots with fresh Pineapple juice or turn them into refreshing desserts. Try this Tender Coconut Granita with Pineapple Basil drizzle.
