Ingredients
- I CALL THIS KONKAN GRANOLA BECAUSE IT REMINDS ME OF TILGUL. THIS GRANOLA IS MADE WITH NATURAL SWEETENERS AND NO ADDED OIL.
- 3 CUPS KURMURA OR PUFFED RICE
- 1/2 CUP PITTED AND FINELY CHOPPED DATES
- 2 TBSP POWDERED JAGGERY
- 1.5 TABLESPOONS WHITE SESAME SEEDS
- 1 TABLESPOON CHAROLI (OPTIONAL)
- 3 TABLESPOONS UNSALTED LIGHTLY TOASTED CASHEW PIECES
- 1/4 CUP FRESHLY GRATED COCONUT OR SLOW ROASTED SLIVERED COCONUT PIECES
- 1/4 TSP SALT
Instructions
- IN A SMALL DRY SKILLET TOAST THE COCONUT ON A MEDIUM FLAME UNTIL GOLDEN AND CRISP. RESERVE ON A PLATE.OMIT THIS STEP IF USING SLOW ROASTED COCONUT SLICES.
- TOAST THE CHAROLI AND CASHEWS IN THE SAME SKILLET UNTIL GOLDEN.
- TOAST THE SESAME SEEDS IN THE SAME PAN UNTL GOLDEN AND COMBINE WITH THE COCONUT. COOL. ADD THE SALT AND TOSS.
- AFTER ALL THE INGREDIENTS HAVE COOLED COMBINE REMAINING PUFFED RICE WITH THE SESAME, CHAROLI, CASHEWS, COCONUT, JAGGERY AND THE DATES.
- STIR TOGETHER WELL TO EVENLY DISTRIBUTE THE INGREDIENTS.
- POUR INTO A CLEAN DRY CONTAINER AND KEEP REFRIGERATED. GREAT AS A SNACK, YUMMY WITH YOGURT, FRUIT AND PORRIDGE.
