Eggless chocolate pressure cooker cake

  • Sift together:
  • 250 grams maida or all-purpose flour sifted
  • 60 grams unsweetened cocoa powder sifted
  • 1 tablespoon baking powder
  • 1 teaspoon sea salt
  • Wet ingredients
  • 1 cup regular or soy milk or 1/2 cup full fat coconut milk combined with 1/2 cup water
  • 400 grams castor sugar
  • 100 grams vegetable oil or melted butter
  • 2 teaspoons vanilla extract
  • 1 cup boiling water 
  • Stir together
  • 2 tablespoons white vinegar 
  • 2 teaspoons baking soda

Vegan chocolate GANACHE

  • 125 grams  90% chocolate pieces or callets
  • 2 tablespoons unsalted vegan or regular butter
  • 2-3 cups icing sugar (to taste)
  • pinch salt
  • 1/3 cup regular or coconut milk + 1 tablespoon extra if needed 
  • water if required

For the cake

Set a pressure cooker with water to heat on the stove. Combine the wet ingredients in a large mixing bowl. Combine vinegar and baking soda. When it fizzes add to the wet ingredients. Then cup by cup incorporate the dry sifted ingredients until you have a smooth batter. Don’t over beat.

Grease a 9 inch round cake pan and pour the batter into it. Cover tightly with foil.
