- Sift together:
- 250 grams maida or all-purpose flour sifted
- 60 grams unsweetened cocoa powder sifted
- 1 tablespoon baking powder
- 1 teaspoon sea salt
- Wet ingredients
- 1 cup regular or soy milk or 1/2 cup full fat coconut milk combined with 1/2 cup water
- 400 grams castor sugar
- 100 grams vegetable oil or melted butter
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Stir together
- 2 tablespoons white vinegar
- 2 teaspoons baking soda
Vegan chocolate GANACHE
- 125 grams 90% chocolate pieces or callets
- 2 tablespoons unsalted vegan or regular butter
- 2-3 cups icing sugar (to taste)
- pinch salt
- 1/3 cup regular or coconut milk + 1 tablespoon extra if needed
- water if required
For the cake
Set a pressure cooker with water to heat on the stove. Combine the wet ingredients in a large mixing bowl. Combine vinegar and baking soda. When it fizzes add to the wet ingredients. Then cup by cup incorporate the dry sifted ingredients until you have a smooth batter. Don’t over beat.
Grease a 9 inch round cake pan and pour the batter into it. Cover tightly with foil.
